It is a staple in Indian and Middle Eastern cuisines. This earthy spice, generally called jeera in India is often associated with spicy dishes but actually, it hardly has any heat, it rather has a warm and citrus flavour.&nbsp;<\/p>\n\n\n\n<p>Although cumin is the key ingredient in many cuisines across the world, it is extensively grown in Middle Eastern and Asian countries. India is the largest consumer and producer of cumin accounting for about 70% production. Syria, Turkey, UAE and Iran are the other major cumin producers in the world.&nbsp;<\/p>\n\n\n\n<p>Cumin is a dried seed of the herb Cuminum cyminum. These tiny seeds have ridges with oil canals. The brown cumin is often confused with caraway seeds due to its oblong shape and yellowish brown colour.&nbsp;<\/p>\n\n\n\n<p>Cumin is not only the key ingredient used in tempering or \u2018Tadka\u2019, it is practically used in every Indian spice blend such as garam masala, sambar powder, chaat masala,&nbsp; <a href=\"https:\/\/www.sanskrutirestaurant.co.uk\/manchester\/maharashtrian-cuisine-everything-you-need-to-know\/\"><strong>Maharashtrian<\/strong><\/a> goda masala, biryani powder. It is essentially used in most of the savoury dishes, be it <a href=\"https:\/\/www.sanskrutirestaurant.co.uk\/manchester\/indian-street-food-the-essentials\/\"><strong>Indian street food<\/strong><\/a> such as <a href=\"https:\/\/www.sanskrutirestaurant.co.uk\/manchester\/mumbai-street-food\/\"><strong>chaats<\/strong><\/a>, staple dishes such as <a href=\"https:\/\/www.sanskrutirestaurant.co.uk\/manchester\/menu\/daal-gf\/\"><strong>daal<\/strong><\/a>, signature dishes such as dal baati churma from <a href=\"https:\/\/www.sanskrutirestaurant.co.uk\/manchester\/flavours-of-royal-rajasthan-in-india-rajasthani-cuisine\/\"><strong>Rajasthani cuisine.<\/strong><\/a> Jeera dhaniya powder (cumin <a href=\"https:\/\/www.sanskrutirestaurant.co.uk\/manchester\/coriander\/\"><strong>coriander<\/strong><\/a> powder) is a staple in many regional cuisines.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>What are different types of cumin seeds?&nbsp;<\/strong><\/h3>\n\n\n\n<p>There are 3 varieties of cumin seeds used in cooking.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Brown cumin<\/strong>: These have an oblong shape and are larger and fatter than black cumin. The scientific name is Cuminum cyminum. These are yellowish brown in colour and are more widely used than others.<\/li>\n\n\n\n<li><strong>Black cumin<\/strong>: Its scientific name is Nigella sativa, they are charcoal black in colour and are slightly smaller than other varieties. These seeds have a slightly sweet taste with intense citrus flavour. It is called kalonji in India.&nbsp;<\/li>\n\n\n\n<li><strong>Bitter Cumin<\/strong>: Its scientific name is Cuminum nigrum and is more bitter than other varieties. It is popularly called kala jeera or Kashmiri jeera in India.&nbsp;<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>What does cumin taste like?<\/strong><\/h3>\n\n\n\n<p>Cumin has a warm and earthy flavour profile with a slight bitter note. Whole cumin when fried in oil until crackled adds intense flavour to the dish. Ground cumin (cumin powder) adds instant depth to any dish when added.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Storage&nbsp;<\/strong><\/h3>\n\n\n\n<p>Cumin should be stored in a clean jar in a dry place. Freshly ground cumin powder imparts a lovely flavour and aroma to the dishes. It eventually loses its flavour if stored for a longer period of time. However dry roasted and ground cumin preserves flavour for a little longer when stored in a dry air-tight container.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Health benefits of cumin seeds<\/strong><\/h3>\n\n\n\n<p>Black cumin has immense health benefits &#8211; reduce acne, control blood pressure, ease joint pains and improve immunity.&nbsp;<\/p>\n\n\n\n<p>Bitter cumin helps treat coughs, soothes digestive tracts, helps regulate digestion and reduces bloating.&nbsp;<\/p>\n\n\n\n<p>Brown cumin promotes digestion, improves metabolism and helps fight inflammation.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Cooking with cumin<\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Brown cumin: <\/strong>It is used as a whole or ground. Generally whole cumin is fried in oil at the beginning to release the aroma and disperse the flavour into the dish. Whereas the ground cumin is used along with other dry spices to flavour the dish. Perhaps it is either used at the end or in the middle of cooking along with other dry spices such as turmeric, chilli powder or coriander powder.&nbsp;<\/li>\n<\/ul>\n\n\n\n<p>The amount of cumin used differs based on the whole or ground being used.&nbsp;<\/p>\n\n\n\n<p>Because ground cumin is more concentrated than whole cumin. Less amount of ground cumin has to be used if using it as a substitute to whole cumin.&nbsp;<\/p>\n\n\n\n<p>Roasted cumin also called bhuna jeera in Indian cuisine is a great way to add a kick of earthy flavour and crunch to any dish. Crush it slightly in a mortar and pestle to bring out even more flavour. Roasted and ground cumin adds a lovely flavour when sprinkled on top of the dishes. Roasted cumin powder need not be cooked to release the flavour so it is usually added at the end for stir fries. It is sprinkled on raita, masala lassi, salads and soups.&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Black Cumin: <\/strong>These tiny black seeds are used in flatbreads such as naan, roti and salads to enhance the taste.&nbsp;&nbsp;<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Bitter Cumin: <\/strong>These are used to flavour dishes.
